Egg Drop Soup

I had absolutely no idea this was such an easy dish to make. It took maybe 10 minutes. I am still appalled. I am going on an egg drop soup diet. It has to be healthy, all it has is broth, spices, and egg?

Ingredients:

  • one carton of chicken broth or stock
  • soy sauce
  • sesame oil
  • garlic
  • ginger
  • 2 large eggs
  • green onion
  • chili crisp

This is an extremely simple recipe. Sauté your garlic and ginger in the bottom of your pot with just a small bit of sesame oil. I used 3 cloves of garlic and a medium size bloop of ginger paste. Once the garlic is fragrant, add your chicken stock and bring to a boil. Add soy sauce to taste. Let boil for a couple minutes.

Most recipes will call for a cornstarch slurry to be added at this point to thicken the soup, I personally like it better without. Whatever floats your boat.

Next, whisk your 2 eggs in a bowl. Once the eggs are whisked, slowly pour them into the boiling broth while stirring with your other hand. This will make the egg form ribbons.

After your egg ribbons have formed, turn off the heat. Add your sesame oil, I would say probably a few tablespoons worth, to taste. Stir.

Once added to a bowl, garnish with chopped green onion and chili crisp.

It makes a perfect easy meal prep! Doubling this recipe makes me about 4 mason jars of soup.
